Here at Monks we are fortunate to attract wonderful team members who are led, trained and guided by our department managers Daniel, Alice & Shauna. We are proud of our people, they are at the heart of everything we do here.
Shauna is actually from Tipperary, but we let her away with that because she knows more about The Burren than the locals. Shauna runs the front of house operation in the bar and restaurant. In her spare time she climbs every mountain and hikes every trail and then writes it all down in her wonderful blog. She will point you in the right direction for your next adventure.
Chef Daniel runs a tight ship in the kitchen while also overseeing the property as a whole. Daniel protests that he has no hobbies or interests outside Monks because he lives and breaths it, like a good Head Chef should.
Native to the area, Alice is a wealth of knowledge on all things Ballyvaughan. As Front Office Manager, Alice oversees the rooms and housekeeping division of the property. When not at Monks, you'll find Alice out walking Topsy the dog or planning her next travel adventure.
