Our food culture and ethos are influenced by the land and the waters that surround Ballyvaughan. C.S. Fish is a family run business with over 30 years’ experience in delivering the finest quality seafood from the shores of Ireland. Based in Doonbeg in West Clare C.S. Fish has been built by the vastly experienced Charlie Sexton and then passed on to his son Cathal. Cathal visits us daily offering our head chef, Daniel Daly, the opportunity to select the freshest of fish.
Kelly Oysters are located in Kilcolgan, Co. Galway. This family run business has been supplying oysters, mussels and clams for more than 60 years. They have perfected the craft and attribute the unique taste of their shell fish to the perfect balance of water from the Atlantic Ocean where it mixes with surrounding rivers. Our philosophy, here at Monks Ballyvaughan, is to handle the oysters as little as possible to retain the natural flavour from the Kelly Oyster beds.
Burren Gold Cheese is produced in the Aillwee Cave Farm Shop, located here in Ballyvaughan since 1985. Milk for the award-winning farmhouse cheese is sourced from a local farm, where the Friesian Dairy Herd grazes the unique rich grasses and herbs of the spectacular Burren region. Burren Gold Cheese has the least ‘food miles’ travelled to be on your plate.
St. Tola Goat Cheese is the finest, gourmet goat’s cheese and has been hand-made in the townland of Inagh just south of the Burren since the early 1980’s. St. Tola has achieved exceptional critical acclaim since its launch.
Celtic Salads is located in Bell Harbour just minutes from us. The owners, Colm & Donncha, have perfected their craft of start to finish growing of the finest salads to be had for the last 15 years. The food miles our salad leaves and herbs travel are kept to a minimum and we are lucky to receive fresh produce daily.
Glynn’s Fruit and Vegetables are located in Oranmore, Co. Galway. They have been a major source in supplying fruit and veg both locally and to the catering industry for many years. The family run business dates back 75 years. As their slogan states ‘If there is anything fresher, it’s still growing’.
Pallas Foods have been at the fore front of supplying the catering industry for more than 30 years. Pallas ensures small artisan suppliers can have their products delivered to Monks Ballyvaughan.
